- Goat trotters (paya) : 4 pieces
- Onions : 1 Medium size
- Green Chile : 5 pieces
- Red Chile Powder : 1 Tablespoon
- Garam Masala powder : 1 Tablespoon
- Ginger Garlic Paste : 3 Tablespoons
- Coriander Powder ( Dhannia Powder) : 1 teaspoon
- Turmeric Powder : ½ teaspoon
- Green cardamom : 3 pieces
- Black cardamom : 3 pieces
- Cloves : 6 pieces
- Cinnamon 1 inch size : 2 pieces
- Coriander leaves choked : 1 to 2 tablespoons
- Cooking Oil : 4 to 5 tablespoons
- Salt to taste
Procedure of Making Paya Curry
To make mutton paya recipe, burn hair, so that hair removed from skin. Take 4 goat’s trotters and cut into pieces as you wish. Wash properly all paya pieces with hot water until its clean and clear. Dry it well so that there is no water in it.
Then take the oil in a pressure cooker or pan. When the l is slightly warm, put the feet in it and Lightly fry it. So that his smell disappears. Then add salt and turmeric. Add more than half of the garlic and ginger paste. Then fry it well. But be careful not to burn it.
Add a small amount of water to it. Then add green cardamom, black cardamom, cloves, Cinnamon and Coriander Powder. Then these ingredients fry well. Also add a small amount of water to take it. Add 1 piece of full onion. Then add 1 and half liter water and let it cook. If you are cooking it in a pressure cooker, check it after half an hour. If you are using a pan, check back in 50 minutes.
When the water is dry, add the remaining ginger and garlic paste and cook (fry) it well. Then let it cook for 5 to 10 minutes. When it is well melted, add water as required. But it has to have as much water in it as you need broth.
And take out the onion. Then add green chilies, green coriander and garam masala powder. Then cook for one to two minutes and flame off.
